Irish Stew |
I'm making my mother-in-law's
Irish Stew today. Even in this warmer weather, it is great. The best Irish Stew ever.
Irish Stew Recipe
Ingredients:
750 g diced lamb
2 rashers bacon, diced
1 turnip, 1 parsnip& 2 carrots, all diced
1 onion, chopped
About 4-5 potatoes. Dice half of these, slice the rest approx half cm. thick
1 cup peas (frozen)
2 tablespoons tomato paste, chopped parsley
1 or 2 stock cubes ( beef or veg)
METHOD
Place everything except the peas and parsley in the slow cooker, add about a cup of water, and cook on high for 1 hour, then 5-6 hours on low, or cook on low for 7-8 hours. The sliced potatoes will break up and thicken the gravy.
You may need to add more water while cooking.
Add peas and parsley in the last hour
