Lemon Curd Recipe Yummy and Easy - I feel that doing it slowly makes a better curd and can make sure the eggs don't scramble
Lemon Curd Recipe
Ingredients:
- 1 cup lemon juice
- 1 1/2 cups sugar
- 250g butter chopped
- 8 eggs beaten.
METHOD
- Put all into a slow cooker on high and stir until the butter melts
- Switch to low and put the lid on with a teatowel under it and stir every now and then for about 1 1/2 hours or until the mix is thick and coats the back of a wooden spoon.
- Put into sterilised jars
Toast, as an ingredient for loads of sweet desserts as well. I recently used it to swirl through cheesecake. Also great for a filling for sponge cake and also a topping for pavlova and also for on top of icecream. Yum
