Steak Casserole Tomato Base Yummy!
Steak Casserole Recipe
Ingredients:
- 750 grams chuck steak
- 1 large onion
- 1/2 red capsicum
- 3 medium carrots
- Small sweet potato
- 1 medium potato
- 6 large button mushrooms
- Can of Heinz Big Red tomato soup
- 1 Massel chicken stock cube (dissolved in 1 cup of boiling water)
- 1 teaspoon crushed garlic
- 1 teaspoon dried rosemary
- Fresh Parsley
- Pepper and salt
METHOD
- Peel and prepare vegetables - cut carrots into large chunks, capsicum into strips, sweet potato & potato into round medallions, onions into wedges, mushrooms into quarters.
- Trim and cut steak into cubes.
- Put carrots, potato and sweet potato into slow cooker.
- Brown steak in fry pan - tip into SC.
- To fry pan add onions, mushrooms, capsicum, garlic and rosemary. Saute and then add to SC.
- To fry pan add chicken stock (water & cube) and tomato soup. Stir and simmer for a couple of minutes to loosen yummy bits from the bottom of the pan. Add to SC with salt, pepper and parsley.
- Cook on high for 4-6 hours (until meat & vegetables are tender). Adjust temperature and time according to how your SC performs.
